
Forging & Foraging Flavor
One of my primary goals with Wunderkammer is to create unique beers that are an expression of my landscape. That is why I emphasize using some of the most local ingredients I can find. Another part of that is using slow and traditional brewing processes and equipment. Finally, incorporating local herbs, flowers and fungi from my foraging literally brings the landscape into my beer. All this in an effort to create beers of nuance and distinction.
